Preparing a tomato (watch Tuesday’s video here) is super simple, especially when summer gives you the gift of gorgeous tomatoes. Some people like the seedy pulp on the inside of the tomato, but when it comes to the salsa party, seeds aren’t invited. Nope.
This recipe is a marriage between my two favorite things: guacamole and salsa. Because dude, no one should have to choose. Also, like how better to celebrate a ripened avocado than with salsa? The lime in this recipe will help the avocado from turning brown if you have leftovers, but let’s be real who has leftover salsa.
Spicy Avocado Salsa
- 1/2 cup red onion, diced
- 1 tablespoon vinegar
- 1 avocado, diced
- 3 tomatoes, de-seeded and diced
- 1 jalapeño, de-seeded and chopped
- 1 clove garlic, minced
- Juice of 1/2 lime
- Salt and pepper
- Combine the red onion and vinegar and let sit for 10 minutes. This will break down the onion so you don’t have a harsh, onion-y crunch. Drain off as much vinegar as you can.
- Combine all ingredients, except for salt and pepper. If you like a spicier salsa, add some jalapeño seeds until you reach optimal spice level.
- Try your salsa with a tortilla chip- your chips might be salty enough for the salsa! You can always add more, but never less.
